Jamonero...the ham man. Ham is always carved to order if you want the best and the 'Jamonero' is specially trained to cut these expensive hams the right way. Restaurants always have Jamon Iberico on the menu but a less expensive way is to buy 100 grams, about 3 ounces, at a market like this, usually 8-10 Euros. Just remember this ham is at its best when freshly carved, so start eating!

Don't be put off by simple cafés or cafeterias, these inexpensive finds can come up with dishes that often put the fancy restaurants to shame. You have to be prepared to take the gamble and try places you stumble across but the rewards can make up for the bad experiences, which are quite rare.
